Viognier Pairings Butternut Squash Wonton

Ingredients
- 1 large butternut squash
- 2 cups butter
- 2 tbsp sage
- ½ cup sour cream
- salt
- 20 wonton wrappers
- 4 cups oil

Roast the large butternut squash until tender.

Peel the squash and place it in a mixer.

In a saucepan, heat the butter over medium-low heat, stirring constantly until it browns.

Add the sage, then carefully stir in the cream (note: the mixture will rise when adding cream and sage).

Remove from heat and add the butter mixture to the squash in the mixer. Blend until smooth.

Fill 20-30 wonton wrappers with 1-2 teaspoons of the squash mixture.

Heat oil to 375 degrees F. Fry three wontons at a time, 2-3 minutes, until golden brown.
