A New Culinary Chapter

Vina Robles is proud to unveil the next evolution of its hospitality experience with the launch of The Eatery at Vina Robles—a vibrant new culinary program led by renowned Central Coast chef Nicola Allegretta.

Officially opening in June 2025, this exciting partnership brings Allegretta’s signature Italian-inspired cuisine to Vina Robles’ modern tasting room just minutes from downtown Paso Robles. The Eatery will offer a hybrid food program with full-service dining Friday through Sunday, and a curated grab-and-go menu available during the week.

“This isn’t just an amenity; it’s a defining part of how we’re reimagining the wine tasting experience,” said Courtney Benham, owner of CMB Family of Wines. “We hope Nicola’s food will bring texture and soul to our wines, creating a layered, welcoming atmosphere that resonates with both locals and visitors.”

A Chef Driven Culinary Experience

Chef Allegretta, best known for San Luis Obispo restaurants Mama’s Meatball and Mistura, brings more than 30 years of global culinary experience to Vina Robles. Born in Bari, Italy, and trained at the Italian Culinary Institute, Allegretta has cooked in France, England, the Dominican Republic, and across the U.S.

His menu at The Eatery reflects his deep Italian roots and international flair, featuring seasonal dishes, fresh salads, his beloved Mama’s Meatballs, and a range of Neapolitan-style pizzas cooked in a handmade Stefano Ferrara wood-fired oven—imported directly from Naples and built brick by brick using time-honored techniques.

“This collaboration brings together great wine, hospitality, and food that tells a story,” said Allegretta. “I’ve cooked around the world, but there’s something special about bringing it all together here in Paso.”

The Eatery is anchored by the custom-built Neapolitan pizza oven—a stunning visual centerpiece and one of the most revered tools for authentic wood-fired cooking in the world. From its crackling hearth come pizzas layered with thoughtfully sourced ingredients, designed to pair perfectly with Vina Robles wines.

Guests can enjoy:

  • Full-service dining Thursday through Sunday from 11am to 5pm
  • Weekend highlights: wood-fired pizzas, Mama’s Meatballs, and seasonal antipasti and small plates
  • Weekday offerings: grab-and-go salads, sandwiches, and other chef-prepared items to complement wine tastings or take on the go

A New Era at Vina Robles

The debut of The Eatery is part of a broader transformation at Vina Robles under the leadership of CMB Family of Wines, which acquired the winery in late 2024. The refreshed tasting room opened in early 2025 and now serves as a warm and contemporary gathering place, blending European hospitality with California style.

With the addition of a chef-driven food program, Vina Robles becomes one of the few Paso Robles tasting rooms to offer elevated wine and food pairings on-site, further cementing its role as a destination for both locals and travelers.
